Tomatillo Salsa Verde

Makes 1 Quart
from Patti

1 lb. Tomatillos, husked & washed
1 medium Onion, roughly chopped
3 Garlic Cloves, peeled
Jalapeño Pepper, seeded,  to taste
2 heaping tbs. fresh Cilantro
1 tbs. fresh Oregano
1½ tsp.Salt
½ tsp. Cumin
¼ cup White Vinegar

  1. Blend all ingredients in a blender. Pour blend into a saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 15 minutes.
