Roasted Pumpkin Seeds

2 cups Pumpkin Seeds
2 tbs. Vegetable Oil
1 tsp. Salt, or more to taste
2 tsp. Chili Powder, Optional

  1. Rinse seeds well in cold water being sure to rinse away any fibers.  Pat thoroughly dry. Transfer seeds to a large bowl and stir in vegetable oil and salt. If you want spicy pumpkin seeds, add the chili powder as well.
  2. Spread seeds on a baking pan in a single layer. Bake in a 350º oven until crisp and golden, about 12 to 15 minutes. Taste for seasoning and add more if desired.

Variation: Pumpkin Pie Seeds

Substitute ½ stick (4 tbs.) of Melted Butter for the oil and add the following spices instead of salt and chili powder:

3 tbs. Light Brown Sugar
1½ tsp. Cinnamon
½ tsp. Allspice
pinch of  Nutmeg, ground Cloves & Salt
