Roast Beef Salad

Super yummy salad from Max!

4 Servings

Dijonaise Dressing:

1½ tbs. Dijon Mustard
2½ tbs. Light Mayonnaise
Zest & Juice of ½ Lemon
Salt, to taste
Black Pepper, freshly ground, to taste

Salad:

1 lb. Deli Roast Beef, julienned
½ large White Onion, julienned
½ cup fresh Parsley, chopped
2 small Tomatoes, skinned
½ Red Pepper, julienned
2 Scallions, shredded

  1. Mix the dressing together in a bowl. Add roast beef, onion and parsley. Toss and refrigerate for two hours.
  2. Cut the tomatoes into wedges. Arrange the roast beef salad on a platter and decorate with the tomato wedges, red pepper and scallions.
