Cold Zucchini Soup

3 cups Chicken Broth
3 Zucchini, sliced
½ Cup Onion, chopped
½ Red Pepper, chopped
½ Green Pepper, chopped

  1. Bring stock to a boil and add vegetables. Simmer for 15 minutes.
  2. Remove solids from broth and blend.  Add  broth to pureed mixture.

1 cup Sour Cream
1 tbs. Parsley, chopped
1½ tbs Dill, chopped

  1. Add sour cream and herbs to mixture. Blend, chill and enjoy!
