A Tale of Two Lassi

Lassi is a creamy,  refreshing yogurt drink which originated in India. They are surely precursors to the now popular smoothies. Here are two yummy fruit flavored lassi. The mango is more traditional, while the watermelon is a modern take.

Mango Lassi

2 Servings

1 ripe Mango, peeled & chopped
1 cup Greek Style Yogurt
Sugar, to taste
pinch of Salt
½ cup chilled Club Soda
1½ tbs. Pistachios, chopped

  1. Purée mango in blender. Add yogurt and process again. Taste for sweetness and process again with sugar, if desired.
  2. Pour lassi into 2 tall glasses. Stir in salt and club soda to taste. Do not add too much club soda. Lassi should have the consistency of a milkshake. Sprinkle pistachios on top.

Watermelon Lassi

2 Servings

1 cup Greek Style Yogurt
4 cups Watermelon chunks, seeded
2 tbs. Sugar or to taste
¼ tsp. Cardamom
large pinch of Salt
2 Lime Wedges
Mint, for garnish (optional)

  1. Put all ingredients except lime wedges in a blender. Purée on high speed until smooth.
  2. Pour lassi into 2 tall glasses. Rub the edge of each glass with a lime wedge and squeeze juice into the lassi. Stir and serve with a mint garnish, if using.

Note: If you don’t have Greek Yogurt you could use regular yogurt as long as you take the time to thicken it. Here’s how: Put yogurt in a fine mesh strainer that is set over a deep bowl to catch drips. Let it drain for an hour or so to thicken. The longer it sits, the thicker it gets.
