Veggie Quiche With Thyme

Veggie Quichefrom Patti Elwell

4 Eggs
1 cup Light Cream
1 tsp. Thyme
½ tsp. Salt
Pepper, to taste
1 medium Onion, chopped
1 cup Cheddar Cheese, shredded
Baby Spinach
fresh Mushrooms, sliced
Pie Crust

  1. Preheat oven to 350º.
  2. Put pie crust in pie plate.
  3. In a bowl, beat eggs, cream, salt, pepper, and thyme together.
  4. Spread onions, cheese, a layer of baby spinach and mushrooms in pie crust.
  5. Pour in egg mixture.
  6. Bake for 45 minutes or until set in middle. Serve warm.
